Potato Pizza Bowls

01Preheat oven to 400 degrees F. 2. Toss the cubed potatoes with avocado oil if using, then with the garlic, onion, and himalayan salt (optional). Roast in the oven for 20-25 minutes or until they can be pierced easily with a fork. 3. Meanwhile, heat a medium skillet over medium heat. Add the chopped onion and saute for 1- 2 minutes (add a little water if the onions stick to the pan. However, onions create their own juice when heated so no oil should be necessary, and very little water would be needed). 4. Add the minced garlic and saute until fragrant, about 1 minute. Add the mushrooms, and stir. 5. Saute until the mushrooms begin to release some of their liquid, about 5 minutes. Add the dried oregano and saute for 1-2 minutes more. Set aside. 6. Once the potatoes are finished roasting, in a large bowl combine the potatoes, chopped greens, and the marinara sauce. If assembling separately for serving, put the potatoes in the dish first and then add the onion and mushroom mixture on top. Enjoy!
